Microphone audio is analysed and drawn locally — it is never recorded, saved or sent anywhere, and it is deliberately not routed to your speakers so it cannot feed back. Peak detection uses the loudest FFT bin, so its resolution is the sample rate divided by the FFT size: bigger FFT means finer pitch, slower response.
